Ahhh, the meatball. Those lovely little morsels of savory deliciousness. We can all admit that they were a staple with a heap of catsup as a kid. These little guys are simply timeless. So if you are a meat eater, or a kid for that matter, they are a no-fail meal. And, they freeze well, if you like to make extras for a rainy day.
This recipe was originally borrowed from Epicurious, but modified for a kid-friendly version. If you are feelin’ fancy, go for the original. We love these, too.
Mountain Mama Meatballs
- 2/3 cup Panko breadcrumbs
- 3 Tbs milk
- 1/3 cup grated Parmesan cheese
- 1/4 cup very finely chopped onion
- 1 large egg
- 1 clove minced garlic
- 1/4 tsp ground black pepper
- 1/2 lb sweet Italian sausage
- 1/2 lb ground beef
Preheat oven to 350 degrees. Mix crumbs and milk in a medium bowl and let stand for 5 minutes. Mix in the Parmesan, onion, egg, garlic and pepper. Add sausage and beef and blend well. Using hands, form the mixture into meatballs of your desired size, and place on a baking sheet. Bake until light brown and cooked through, about 30 minutes. Let drain on a paper towel and serve.
