I adore butter. And berries. And did I mention butter? So this recipe is dear to my baking soul. I made it for a friend’s birthday, and it’s not only delish, but beautiful. It looks like a spring party. And it’s super simple, so it doesn’t take a ton of time or fretting. And who doesn’t like a visual party without a ton of prep? Voila. The Berry Butter Tart.
Ingredients for Crust:
- 1/2 cup confectioners’ (aka powdered) sugar
- 1 3/4 cup all-purpose flour
- 2 sticks softened butter
- 1/2 tsp almond extract
Ingredients for Filling:
- 1 (8 oz) package of softened cream cheese
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- Fresh sliced berries: strawberries, blueberries, blackberries, raspberries, kiwi
For the crust, preheat the oven to 350 degrees (high altitude 360 degrees). Combine the crust ingredients. With your fingers, press the dough into a tart pan with a removable bottom. No need to be picky… if the sides are uneven, it takes on a rustic look. Bake for 10 to 12 minutes, until just slightly brown on the edges. Set aside to cool down.
