As we get closer to summer break, summer sun and summer evenings in the yard, this week’s cocktail hour calls for something completely family-friendly, sun worthy, and versatile. Although we’re not quite there yet, school is winding down and kids are getting excited for summer break. The countdown has begun.
To celebrate the last of this year’s school days, a fancy kiddo drink will do. Our kids love to have a special drink from time to time – a root beer in the garage when they sort their fishing tackle, or a Shirley Temple when we are out to eat and really gettin’ fancy. This cooler feels fancy. Even better, it boasts that whole fruit goodness that we can feel good about serving to a gaggle of kiddos running through the sprinkler (someday). It’s also versatile. Don’t have ginger ale? Substitute Sprite or soda water. Don’t have pineapple? Mangos or berries are also delish.
So get your blender out. Pick up some extra fruit. And cheers to the last weeks of school!
Makes 4 large servings.
- 4 cups pineapple, chilled (mango or berry chunks are good substitutes) (if frozen, leave out to soften)
- 1/4 cup lime juice
- 1/4 cup coconut milk
- 1 cup ginger ale
- optional: 1 cup ice (depending on if pineapple is frozen)
- adult cocktails? optional: 1/3 cup rum
Blend all ingredients except ice in a blender. Check consistency, and add ice for desired thickness. Then clink glasses with your favorite summer buddy.
