This. Salad. Is. Lovely.
I have to admit, apples, cheese, and chives didn’t seem like a lovely mix to me at first. And then I tried it. Yes, the combo of the three ingredients in this salad are surprising, but work incredibly well together. The tart apples make it fresh, the Monchego gives it creamy girth, and the chives add flair. And using Monchego is key, as its texture pairs so well with the crunch of the apple… a little more pricey, but oh so worth it.

Ingredients (these proportions make enough for two):
- two tart apples (honeycrisp or pink lady are lovely), cut into matchsticks
- squirt of lemon juice
- about 2oz Monchego cheese, cut into matchsticks
- chives, finely chopped
- olive oil & salt
Toss the apples in lemon juice. Add in the Monchego and chives, and toss with oil and salt to taste.
